This was one of the first recipes we tried when starting our plant-based journey. All of us love burgers, especially Little Man. At first we were so accustom to having meat be the main player in our meals, we felt like we needed a meat "replacement" every time. These burgers didn't disappoint. Not only did they not disappoint, we couldn't wait to have seconds! I had my work cut out for me to get an avid hunter/fisherman/Alaskan to even try plants or "rabbit food" and these burgers helped me take a massive step in that direction.
Makes ~4 Half Inch-Round Patties
Ingredients:
3 Tablespoons Wild Rice (roughly a half cup cooked)
1/2 Chopped Red Onion
2 Small Carrots, Shredded
1/2 Red Bell Pepper, Chopped
1 Teaspoon Italian Seasoning
1-15 oz Black Beans (drained and rinsed)
1/2 Cup Quick Oats
1 Tablespoon Lemon Juice
1/3 Cup BBQ Sauce
Salt and Pepper to taste
For Serving:
Whole Grain Sandwich Buns
Sliced Tomato
Sliced Red Onion
Dill PIckles
Extra BBQ Sauce (optional)
Prepare:
In a saucepan, bring rice and 1/3 cup water to a boil. Reduce heat to low and simmer until rice curls (about 20min) Remove from heat and fluff with a fork. (This step can be done on the weekend to save prep time during the week. Store in an air tight container until ready to use.)
Preheat oven to 400F and line a baking sheet with a silicone baking mat.
In a skillet saute vegetables for 2-3 minutes. Add water 1-2 tablespoons at a time to prevent vegetables from sticking to skillet. Remove from heat and add Italian Seasoning.
In a large bowl, mash black beans and cooked rice. Mix in sauteed vegetables, oats, and lemon juice. Season with salt and pepper to taste. Form mixture into 1/2 inch patties.
Place burgers on prepared baking sheet and bake for 5 minutes. Brush with BBQ sauce and continue baking until lightly browned (about 5 minutes more).
Serve on whole grain buns, topped with onion, tomato, and pickles. Add more BBQ sauce if desired.
